This excellent product uses only top quality Italian pork in full respect of PDO (Protected Designation of Origin) process. The pancetta is massaged with a mixture of salt and spices and left to dry in special rooms for 7 days; after which the pancetta is transferred to aging rooms where it is matured. The slices is compact and homogeneous, of a bright red colour, interspersed with the white of the fatty parts. Sweet and characteristic taste that is refined with the progress of maturation.
