Excellent sharp gorgonzola from this artisan producer made using cows' milk and then aged for at least 180 days. The paste is compact and buttery with a uniformly intense blue vein. Flavour is aromatic, persistent and intense. Deserved winner of a Bronze Medal at the 2018 World Cheese Awards.
